Furthermore there is a compelling back story to the Sao Tome chocolate ? when looking for a cocoa partner in Africa, Caf?direct were involved in implementing processing practices in Sao Tome, meaning that farmers could ferment and dry their cocoa, rather than sell the raw wet product to traders and middlemen. They also gave new routes to market for the cooperatives to sell their cocoa directly into the UK. As a result the farmers saw a five-fold increase in income per kg for their cocoa..?and Sao Tome is affectionately known as the Chocolate Island!
